Green beans with garlic
Green beans
2 lbs green beans trimmed
2 tablespoons extra virgin olive oil
3-4 tablespoons minced garlic
1/2teaspoon salt
Pepper to taste
Minced fresh parsley (optional)
1. In large pot of water boil water
2. Add green beans to te boiling water and cook until tender/crisp - 4-5 minutes. Transfer beans to large pot with ice water with slotted spoon (this will stop cooking and cool the beans).
3. Transfer beans to baking sheet and blot them dry with paper towel.
4. Few minutes before serving, heat the oil, in baking pot/large skillet. Add garlic and cook on medium heat, stirring to prevent burning, for 25-35 seconds.
5. Add the green beans, salt, pepper, parsley; stir until cooked for about 3-4 minutes.
About 8 servings
